“In the deep Apulian countryside, my grandmother dehydrated our tomatoes. In August she cut the Datterini in two halves and let them dry out under the sun for days. Then she used to put these amazing tomatoes in extra-virgin olive oil, the same one from our olive trees. I can remember the colours, the textures, the flavours​. Everything was in symbiosis with mother nature in a kind of perfect harmony and respect. This is my idea of cooking. I want you to feel the same feelings that I had, when I tasted my family's food.”
